Super Super Simple Enchiladas


I needed a super simple meal for dinner tonight. I just used a bunch of items I already had on hand. Enchiladas are a favorite around here so it was perfect.


Ingredients


Coat the pan(I used 11x7) with cooking spray. Then lay a layer of baby corn tortillas down.


Add the shredded cheese and shredded beef.[You could add other items such as onions, tomatoes, peppers- but I decided I didn't want to cut all that up].


Pour 3/4 of the 28 oz. can of enchiladas sauce over the top. Cover with foil and bake at 375 for 30 mins. When done remove foil and top with cheese-bake another 5 mins.


When its fully cooked you can garnish it with shredded lettuce and sour cream.

Helpful Beading Tools

I was helping my friend Cristi get ready for our craft day at church. She brought up this tip, so I had to share.


Since she hasn't made the investment yet on this bead tray{which in my book is a must have}.


She mentioned that felt fabric would help the beads not roll around everywhere.


The thought then came to my mind that you could use a piece of molding as the bead tray. The groove is where you would place the beads before stringing them.

Remembering the Leftovers

I've had too many moldy Leftovers because I can't remember when I put them in the frig. Since were in the restaurant business we have to put dates on everything. I realized I needed to do this quick tip at home.


I just use these plain white circle labels to put the item name & date of when it was cooked & then its ready to be organized in the frig. Before I wash the container I just take the circle sticker off. Pin It

Kids Craft Closet

I am one of the art moms in my daughters 4th grade class. As I was looking in the supply closet it felt so peaceful I think because it was organized! I knew I had to do something with the kids' craft closet at home. I was inspired!

I labeled everything. The containers on the right were from the dollar store(DollarTree).

Car Hair Kit


It never fails, whenever we get half way to where we're going, one of our girls will ask for a hair thing. I hope this will remedy the problem.


I found these compact containers at the Dollar store. They are so perfect. And the q-tips are a bonus! I used this tip to get the label off the top lid.

Multi-Use Container

Our kids drink juice like water running out of a faucet. So I like to keep some on hand all the time. [Although with all the cavities that the Dentist found, they have to brush right afterwards].
I like using the drink power found at Walmart to mix with my real fruit juice that I can during the summer months. It helps things go further but also is more healthy.


This is Walmart's NEW Drink Powder Container. I am lovin' it.


It unwraps easily & can be used for many things. I put some markers in there. They fit perfectly! Pin It

My New Old Rags

My grandpa taught me a great trick to get the most wear out of a piece of clothing. When that clothing item is either too small, ripped or stained use it as a Paint Rag.


Before I gave some of the girls' clothes to the second hand store, I went through them to see if there was any I could keep. I found a great pile.

This sure beats spending more money on new ones{plus they have style}! Pin It

Go To Sauce

I was given 5 bags of tomatoes so I had to use this wonderful recipe my SIL Fabiana gave me - Little Joe's Sauce. Its my GO TO Sauce -you can use it a few different ways so its a great sauce to always have on hand. A Homemade YUMMY!

#1 Spaghetti Sauce: 1 pint jar LJ Sauce + 1 (8 oz.) can tomato sauce [could + 1 (6oz) can tomato paste if you want it thicker]
#2 Soup Base: Put LJ Sauce in a crockpot and + your choice of meat, beans, veggies to go with it
#3 Cook over meat: use on Roast Beef or other meat. Pour it over and bake in oven.


Ingredients:
1/2 cup olive oil
3 medium onions( I food process these)
4 stalks celery (I food process these)
1/4 cup minced garlic
8 cups tomatoes (I cut them up, measure the 8 cups then food process them)
5 1/2 cups chicken broth
1 Tbl. dry ground oregano
1 tsp. dry rosemary
4 bay leaves(crushed with hands)
2 tsp. dry basil
1 Tbl. black pepper
1/8 cup salt
{I added 1 cup of dehydrated red&green peppers}

Put all the ingredients in a big pot. Turn it on high to start a boil then turn down to low temp and cook for 2 1/2 hours. Stirring occasionally. Put in hot sterilized jars and Water Bath them for 30 mins.
Yields: about 7 pints jars

Inspiration Wall Board

Now that the kids are back in school, I can create using some of my inspirations from my Inspiration Wall Board.


This was suppose to be the door for our Pantry, but it was too heavy to hang so I now use it in my craft room for ideas that inspire me to CREATE!


Its just an old door with glued on magnetic sheeting propped up against the wall. I used magnets to hang the papers/ideas. Pin It

Doughnut Breakfast Sandwich

One day I was watching Paula Deen (I love that lady!) & she did an interesting Burger.


This is my version as a Breakfast Sandwich.


I used the best doughnuts out there.


Cut the doughnut in 1/2.


Layer with spinach, egg whites & turkey bacon. I had to add healthy to it so I could justify eating a doughnut loaded with calories. [FYI: I didn't add any sauce but you could do salsa, miracle whip, mayo or other]

Grandparents are Great

Since tomorrow is National Grandparents Day, I thought I would show you a "great" gift I made for my mom a couple of years ago.


I was inspired by this book(by Gaby Goldsack) I read to our son.


This is my version. I got a board book at the second hand store to alter.

Inside:

Our family pictures.


My mom & me. In the pocket on the right, I wrote a note to her telling her why she is a "great" grandma to our kids.


In the pages following I had each of the kids, on their page, write why they love her.

I know this is special to her because she displays it in her living room on the fireplace mantle.

Church Bag Activities {Part 5 of 5}

Now that we have all the [Extra] Activities done for each week, I can show you what I keep in the Church bag for every Sunday.


Simple Ones


Cars. I had this bag leftover from a family reunion treat. I decided to stitch on a car cutout so we knew that is where those go.


Mormon Ads. Great reminders. You can get these here.


ABC Book. This is one of my favorites! When the girls were little it was a great help to learn the ABC's but now it just helps during the Sacrament when they are supposed to be focusing on the Savior.

Church Bag Activities {Part 4 of 5}


WEEK 4


Puzzle(dollar store find) & Lego car to build


Magnet container with Sticker Magnets


I started with a tin I found at the second hand store, stickers(walmart) & magnetic sheet(walmart/craft stores).


Place the stickers on the magnetic sheeting.


Cut around the stickers with your scissors-as close as you can.


Place them in ziplock baggies, label them then place the baggies inside the container for easy storage. They will use the container as their magnetic surface. Pin It
