Summer Canning

I am finally done with my summer Canning!


I found this new Canning magazine from BHG(on stands til Aug 9th). LOVE it!


I was able to try 15 new recipes(some of my favs: nectarine vanilla/ blueberry pecan/ kiwi lime). I have already tried some of them & I have not been disappointed at all.

I LOVE Homemade Jam- it truly is the best!

Straw/RaspBerry {Jam}

I got a great deal at Costco on some fruit yesterday & our Freezer Jam is getting low so I decided to make some jam today. Growing up my mom made this every year & I have followed in her footsteps. I only buy store bought jam for sauces on meats(mix with mayo & dijon mustard-yummy!) but for toast,pancakes,waffles,etc. this is the only way to eat it.

1-Wash & then mash up all the fruit (I pulse it in the food processor for a bit-we don't like it chunky)


2-Put 6 3/4 cups of sugar(I know that's alot, may that's why its so GOOD!). . .


3-2 cups raspberries. . .


4-1 1/2 cups strawberries. . .


5-Mix all together & let it sit for 10 minutes.


6-Using this pectin . . .


7-Boil 3/4 cup water, put pectin in & boil for 1 minute(constantly).


8-Pour boiling pectin in the fruit/sugar mixture & stir for 3 minutes.


9-Pour into washed containers & let sit for 24 hours before putting it into the freezer. I'm able to get 5(2 cup) ziplock containers full.
TIP: It will not look like a solid when frozen or in frig-its supposed to be a little running. Its better this way!


Now you have a good supply of freezer jam. Yepee! Pin It

{Garden/Canning} Notebook


I finally have a place to put all my notes for my Garden and Summer Canning(a simple photo book from Walmart for $1.00). We planted our garden yesterday. I'm so glad we got it done before all the rain comes that is expected this week. The kids had so much fun! And today they are even checking to see if anything grew overnight.


1-Inside cover: One of my favorite quotes about food prepardness "The revelation to produce and store food may be as essential to our temporal welfare today as boarding the ark was to the people of Noah".


2-My diagram(great to have just in case the name stakes get pulled out) and a list of what we planted. I also just used stickers cut in half to label the year.


3-Thoughts about what worked and didn't.


4-My Canning notes: what we did, how many containers or cans and the cost of the items.


5-Our garden boxes(3'x8' pretreated wood).


6-Just in case you wanted to know how we water the fruits of our labors. From one of the sprinkler heads we connected a hose for the garden. then did "T's" and in each box we followed the outline of the box with the tubing.


7-Name stakes. I was going to use wooden craft sticks but found these at Michael's in the clearance for only .50. What a bargain.

I'm going to keep my unused seeds using this suggestion & this other suggestion.
